Laurent's 9 hectares of vineyards are situated in diverse areas of Brouilly: 1 hectare in Sainte Etienne la Varenne and 8 hectares in Odénas. The topsoils are made up of sand, granite and limestone. Laurent is meticulous with his vineyard work, which is all manual. Severe pruning and thinning of the canopy limits yields and allow aeration for the grapes during the vegetative cycle. All grapes are hand-picked and partially de-stemmed. The must is placed in thermo-regulated vats for the alcoholic fermentation, which lasts between eight and ten days. The wines are aged in large oak foudres. Before bottling, each cuvée is assembled separately in tank, racked, and bottled with no filtration.
The Vielles Vignes is made from 40-60 year old vines; the Cotes de Brouilly from 90-year old vines.
